AMANDA'S CHICKEN NOODLE SOUP

Good for people with colds.

Chop as much carrot, celery, onion and garlic as you'd like. Put them in the bottom of your soup pot with a little olive oil (or a little chicken broth, if you're cooking healthier),a splash of white wine, and whatever spices you'd like. If you're cooking for a sick person and they feel nauseated, go easy on them. But if all they have is a stuffy head, go wild with pepper and cajun seasoning. Amazing things will happen to their sinuses as they eat your soup.

Saute the veggies for about five minutes (longer if you chopped the carrot very coarsely). Add a diced raw chicken breast and cook for a few minutes (the chicken doesn't have to be totally cooked). Add some more spices if you'd like.

Add eight cups of chicken broth and bring to a boil. Pour in about a half-package of egg noodles, bring to a second boil, then turn down the heat and simmer until they're done. Great with crescent rolls or biscuits (hooray for biscuits in a can).
